<p>Reteta traditionala &rdquo;<b>Puricei</b>&rdquo; a fost oferita de Dolores Benezic, autor al blogului www.dollo.ro si preparata de Daimon Trattoria, &icirc;n cadrul proiectului &rdquo;Descopera traditiile culinare romanesti!&rdquo;.</p>
<p>&nbsp;</p>
<p>Din luna martie, derularea activitatilor din cadrul proiectului de responsabilitate sociala se realizeaza cu sprijinul partenerului principal al proiectului, brandul premium Arpis, lansat &icirc;n 1992. Portofoliul de produse Arpis contine faina de malai, faina din grau, gris, otet balsamic, ulei etc.</p>
<p>&nbsp;</p>
<p>Ca multe alte mancaruri cu specific traditional, &bdquo;<b>Puriceii</b>&rdquo; sunt un fel de mancare facut la tara si &icirc;ncropit din resturi: de friptura si de mamaliga, &icirc;ncalzite si amestecate, mancate cu mana.</p>
<p>&nbsp;</p>
<p>Exista mai multe retete de &bdquo;Puricei&rdquo;, cu diferite ingrediente, &icirc;n functie de perioada &icirc;n care erau pregatite: vara &ndash; o reteta mai usoara, cu mai multa branza si mai putina carne si grasime; iarna &ndash; o reteta mai grasa, cu jumari, carne si carnati, toate prajite &icirc;n untura sau ulei.</p>

<p><b>Ingrediente:</b></p>

<li>Malai Arpis &ndash; 1 kg</li>
<li>200-300 g carnati</li>
<li>2-3 linguri ulei Arpis</li>
<li>Piper Kotanyi</li>

<li>3-4 oua</li>
<li>Lapte batut Traditii din Romania</li>

<p><b>Mod de preparare:</b></p>

<p><b>Varianta 1</b></p>
<p>Se pregateste o mamaliga vartoasa din malai Arpis, de cu seara.</p>
<p>&nbsp;</p>
<p>A doua zi, carnatii taiati marunti, peste care se pot adauga resturi de friptura si jumari, se prajesc &icirc;n ulei Arpis sau untura (se pot folosi carnati deja prajiti si re&icirc;ncalziti &icirc;n untura), &icirc;ntr-un ceaun sau tigaie. &nbsp;</p>
</p>
<p>Acolo, peste toate, se faramiteaza mamaliga de ieri si se framanta toata amestecatura timp de cateva minute, pe foc, cat sa se topeasca untura si sa patrunda, odata cu bucatile de jumari, carne, carnati, &icirc;n bucatile de mamaliga.</p>
<p>&nbsp;</p>
<p>Mod de servire: Se mananca cu varza acra tocata si stropita cu ulei Arpis.</p>
<p><b>&nbsp;</b></p>
<p><b>Varianta 2</b></p>
<p>Se prepara o mamaliga normala si se lasa sa se raceasca (preferabil pana a doua zi).</p>
<p>&nbsp;</p>
<p>Mamaliga rece se faramiteaza cu furculita de cu seara, ca sa se usuce.</p>
<p>&nbsp;</p>
<p>Se pune mamaliga &icirc;n uleiul &icirc;ncins si se amesteca fara &icirc;ncetare, cu lingura, ca sa nu se arda.</p>
<p>&nbsp;</p>
<p>Cand mamaliga s-a sfaramat, devenind iar malai si &icirc;ncepe sa &icirc;si schimbe culoarea se pune branza de burduf faramitata cu furculita si se amesteca repede &icirc;n continuare pana branza se &icirc;nglobeaza &icirc;n malaiul copt. &Icirc;mpreuna cu branza se adauga si carnatii taiati foarte mic.</p>
<p>&nbsp;</p>
<p>Optional se adauga ouale batute bine continuand sa amestecam pana cand acestea se &icirc;nglobeaza &icirc;n malaiul &icirc;mbunatatit, fara sa se faca &#8222;omleta&#8221;.</p>

<p>Se adauga piper Kotanyi dupa gust.</p>
<p>&nbsp;</p>
<p>Mod de servire: Se servesc calzi, de preferat, cu laptele batut Traditii din Romania, pentru a taia greata.</p>
<p>&nbsp;</p>
<p><b>Secretul Bucatarului:</b></p>
<p><b>Adevarata savoare a mancarii sta &icirc;n &bdquo;prelucrarea&rdquo; ei cu mainile goale. Puriceii sunt de fapt cocoloasele de mamaliga cu carne pe care le strangi &icirc;ntre degete si le mananci.</b></p>

<li>Carne tocata = &frac12; kg</li>
<li>Gulii medii&nbsp;&nbsp; = 6 buc</li>
<li>Orez&nbsp; = 50 gr</li>
<li>Ulei Arpis, Sare, piper, 1 ceapa, marar, smantana 0,2 kg.</li>
</ul>
<p style="text-align: justify;"><b>Modul de preparare</b></p>
<p style="text-align: justify;">Se curata guliile, se scoate miezul cu ajutorul unei lingurite (trebuie scobite rotund fara a fisura peretii guliei) dupa care se umplu cu aluatul de carne cu orez, sare, piper, ceapa (ca la sarmale). Se pun la fiert cca. 1 ora in apa cu ulei Arpis. &nbsp;</p>
<p style="text-align: justify;">Dupa ce guliile umplute sunt fierte se adauga smantana cu mararul si pot fi servite calde cu sosul de smantana si marar presarat deasupra. &nbsp;</p>
<p style="text-align: justify;"><b>Despre Pensiunea Steaua Dunarii</b></p>
<p style="text-align: justify;">Construita in anul 2001 si fiind prima pensiune din Parcul Natural Portile de Fier, Pensiunea STEAUA DUNARII a fost complet renovata in anul 2012 si ofera in acest moment turistilor romani si straini conditii de cazare si masa dintre cele mai bune.</p>
<p style="text-align: justify;">Situata intr-o locatie ce ofera ca priveliste imaginea iesirii fluviului din Cazanele mici, precum si cea a Muntelui Ciucarul Mare (318 m) sau Ciucarul Mic (313 m), pensiunea dispune de 13 camere duble (twin room), 2 camere triple, 2 apartamente (family suite), 4 camere matrimoniale, toate fiind dotate cu televizor, baie proprie cu dus, incalzire centrali, apa calda si rece in permanenta.</p>
<p style="text-align: justify;"><b>Despre proiect</b></p>
<p style="text-align: justify;">Proiectul &bdquo;Descopera traditiile culinare romanesti&rdquo; este derulat de agentia Russenart Comunications in parteneriat cu brandul Arpis, in perioada <b>februarie &ndash; noiembrie 2013</b> si este sprijinit de 47 de parteneri media (televiziuni, publicatii tiparite si online, bloguri). Partenerul special al proiectului este site-ul de turism culinar,&nbsp; www.chefbuzu.com. &nbsp;</p>

										<content:encoded><![CDATA[<p style="text-align: justify;">Reteta <b>&bdquo;Tocanita de mangalita cu varza murata&rdquo;</b> face parte din proiectul &bdquo;Descopera traditiile culinare romanesti&rdquo; derulat de agentia de relatii publice, Russenart Communications in parteneriat cu brandul Arpis. &nbsp;</p>
<p style="text-align: justify;">Reteta &nbsp;a fost primita de la <b>Vila Honor</b>, Com. Zetea, Jud. Harghita (Ardeal), a fost preparata de bucatarii restaurantului Casa Oprescu (Parcul Tineretului) si poate fi degustata in cadrul restaurantului, la un pret promotional. &nbsp; &nbsp;</p>
<p><b>Ingrediente</b></p>
<ul>
<li>1 kg carne de mangalita</li>
<li>10 dkg untura de mangalita sau ulei Arpis</li>
<li>2 cepe rosii</li>
<li>1,5 kg varza murata</li>
<li>3 dl smantana</li>
<li>2 ardei verzi</li>
<li>2 rosii</li>
<li>2 catei de usturoi</li>
<li>3 linguri de faina alba Arpis</li>
<li>sare, boia de ardei dulce sau iute, chimen dupa gust</li>
</ul>
<p style="text-align: justify;"><b>Modul de preparare</b></p>
<p style="text-align: justify;">Se caleste ceapa taiata marunt, se adauga usturoiul, chimenul si boia de ardei. Adaugam carnea de mangalita taiata in cuburi si o frigem. Stoarcem varza de zeama, completam cu putina apa si adaugam la carne. Condimentam dupa gust si calim carnea cu varza murata sub capac pana la inmuiere. Dregem tocanita cu smantana si putina faina. Se serveste cu parjoale de cartofi si smantana.</p>
<p style="text-align: justify;"><b>Despre Vila Honor</b></p>
<p style="text-align: justify;">Vila HONOR ofera conditii de cazare deosebite, in 11 camere cu bai proprii moderne dotate inclusiv cu uscator de par, TV &#8211; cablu in fiecare camera, incalzire centrala si balcon. Vila dispune si de sala de conferinte, centru de echitatie cu cai islandezi, precum si de un parc cu animale salbatice. Turistii se pot bucura si de gratar in curte, loc de joaca special amenajat ptr. copii, ore de echitatie, dar si sanie trasa de cai pe perioada iernii. &nbsp;</p>

<p style="text-align: justify;">Proiectul <b>&bdquo;Descopera traditiile culinare romanesti&rdquo;</b> este derulat de agentia Russenart Comunications in parteneriat cu brandul Arpis, in perioada februarie &ndash; noiembrie 2013 si este sprijinit de 47 de parteneri media (televiziuni, publicatii tiparite si online, bloguri). Partenerul special al proiectului este site-ul de turism culinar,&nbsp; www.chefbuzu.com.&nbsp;</p>
<p style="text-align: justify;">Retetele traditionale din Ardeal au fost puse la dispozitia proiectului de: Pensiunea Valea Mariilor, Adrian Buzoianu (www.chefbuzu.com), Vila Honor si Castelul Printul Vanator si Dracula.</p>

<p><b>Ingrediente</b></p>
<ul>
<li>untura sau ulei Arpis</li>
<li>ceapa</li>
<li>branza de oaie framantata cu sare</li>
<li>slanina sau carnati</li>
<li>faina de malai Arpis sub forma de cir de mamaliga (continutul acela subtire care se obtine inainte de a mesteca mamaliga sau o mamaliga foarte subtire)</li>

<p style="text-align: justify;"><b>Modul de preparare</b></p>
<p style="text-align: justify;">Se caleste ceapa, se pun carnatii sau slanina, bine prajite, dupa care se toarna cirul fiebinte amestecat cu branza, se lasa cateva minute la foc, dupa care se serveste cu muraturi, preferabil varza murata sau castraveti murati. &nbsp;</p>
<p style="text-align: justify;">Observatie: Retetele traditionale sunt adesea preparate &bdquo;dupa ochi&rdquo;, nu in functie de gramaj, dar cantitatile sunt relativ usor de estimat!</p>

<p style="text-align: justify;"><b>Despre Pensiunea Valea Mariilor</b></p>
<p style="text-align: justify;">Pensiunea VALEA MARIILOR este asezata exact in mijlocul naturii, in apropierea unei paduri, dar si doua paraie (Maria Mare si Maria Mica), afluenti ai raului Somesul Mare. Pensiunea este o casa traditionala romaneasca transformata, care reuseste sa-si pastreze identitatea, printr-o combinatie intre rustic si modern.</p>

										<content:encoded><![CDATA[<p style="text-align: justify;">Reteta face parte din proiectul <b>&bdquo;Descopera traditiile culinare romanesti&rdquo; </b>derulat de agentia de relatii publice Russenart Communications, in parteneriat cu brandul Arpis. Reteta &bdquo;<b>Stufat de miel la tigaie</b>&rdquo; a fost primita de la <b>Pensiunea Select, </b>Baile Herculane,<b> </b>(Banat) si a fost preparata de Gelu-Marian Jilavu, Food Manager in cadrul proiectului &nbsp;</p>
<p style="text-align: justify;">Din luna martie, derularea activitatilor din cadrul proiectului de <b>responsabilitate sociala</b> se realizeaza cu sprijinul partenerului principal al proiectului, brandul premium Arpis, lansat in 1992. Portofoliul de produse Arpis contine faina de malai, faina din grau, gris, otet, ulei etc. &nbsp; &nbsp;</p>
<p><b>Ingrediente</b></p>

<li>Un miel gras</li>
<li>Ceapa verde&nbsp;</li>
<li>Usturoi verde, piper&nbsp;</li>
<li>Ceapa uscata</li>
<li>Rosii in bulion</li>
<li>Vin alb</li>
<li>Sare,verdeata</li>
</ul>
<p style="text-align: justify;"><b>Modul de preparare</b></p>
<p style="text-align: justify;">Carnea se taie in bucati. Ceapa se curata, se spala si se taie marunt. Ceapa si usturoiul verde se taie in bucati mai mari. Dupa ce s-a calit carnea in ulei si ceapa uscata, se adauga apa cat sa acopere carnea. &nbsp;</p>
<p style="text-align: justify;">Cand carnea s-a fiert aproape de tot se pune ceapa, usturoiul verde apoi si rosiile decojite. Se potriveste de sare, iar la sfarsit se pune vinul alb. Dupa ce a scazut suficient se adauga verdeata. Se serveste cu mamaliga calda.</p>

<p style="text-align: justify;"><b>Despre Pensiunea Select</b></p>
<p style="text-align: justify;">Situata un centrul statiunii Baile Herculane, Pensiunea SELECT se remarca prin confortul locatiei, amabilitatea personalului si a proprietarilor, dar si prin preparatele culinare deosebite.</p>
<p style="text-align: justify;">Toate camerele dispun de baie proprie dotata cu uscator de par si halate, au aer conditionat, minibar, seif, televizor LCD, internet, telefon si fax.</p>

<p style="text-align: justify;"><b>Despre proiect</b></p>
<p style="text-align: justify;">Proiectul &bdquo;Descopera traditiile culinare romanesti&rdquo; este derulat de agentia Russenart Comunications in parteneriat cu brandul Arpis, in perioada <b>februarie &ndash; noiembrie 2013</b> si este sprijinit de 47 de parteneri media (televiziuni, publicatii tiparite si online, bloguri). Partenerul special al proiectului este site-ul de turism culinar,&nbsp; www.chefbuzu.com. &nbsp;</p>
<p style="text-align: justify;"><b>Retetele traditionale din Banat au fost puse la dispozitia proiectului de: Adrian Buzoianu (www.chefbuzu.com), Laura Laurentiu (www.retetecalamama.ro), Pensiunea Select, Hotel Senator si Casa Altringen. </b></p>
